Vit's doubts are, in my opinion, well-founded, but even if Umineko Gold Edition turns out to be a success, it will not influence the future of this project.

Try pressing "M" button in-game.

Archives ending with an index (.7z.<number>) are multi-part. When you extract the one ending with .001, the other corresponding parts are extracted as well, so you should have obtained every file needed.

I'm getting that weird stuttering sound thing

Is it stuttering during video (e.g. opening) playback or the actual gameplay? If it's the former, then there is not much we can do, unfortunately. The latter would be a worrisome sign for us, though.
